Romanian Meatballs with Veggie Crisps Crumbs

Romanian meatballs differ from Italian meatballs in that they have the potato starchiness, almost like a potato pancake. Use Eatsmart Veggie Crisps as breadcrumbs to add that salty flavor and to serve as a binding component.

Ingredients
1 T olive oil
2 small onions or 1 large one, finely chopped
2 cloves garlic, finely minced
2 potatoes grated
2 lb ground pork
2 eggs
½ cup Eatsmart Veggie Crisps, broken down into crumbs
¼ cup parsley finely chopped
¼ cup dill finely chopped
Pepper

Wash, peel, and grate the potatoes. Heat a skillet to medium heat. Add the olive oil then the onion and garlic. Add the potato and cook the mixture until it just starts to brown.

Combine the ground pork, eggs, Eatsmart Veggie Crisps crumbs, parsley, dill, pepper and the potato mixture in a bowl. Form this into balls.

Bake the balls at 400 degrees until they are brown, about 30-40 minutes, depending on the oven and the meatball size. Serve while they are still warm.
