Eatsmart Fall Salad


  • Eatsmart Veggie Sticks
  • Pancetta
  • Sweet Potato, Sliced or Cubed
  • Spinach
  • Goat Cheese
  • Red Apple, Diced
  • Candied Pecans
  • Balsamic Vinaigrette

  1. Dice the pancetta and cook it over medium heat. Remove the meat and drain the oil on a paper towel
  2. Cook sweet potato noodles (strips), or cook them cubed, and let them cool
  3. Wash the spinach and spin or pat it to remove any excess water. Place it in a bowl and top it with goat cheese, cooked pancetta, diced apple, candied pecans, sweet potato, and Eatsmart Veggie sticks
  4. Drizzle with balsamic vinaigrette and serve
