Crush Veggie Crisps in a bag into small particles, or use a food processor and pulse them until they become the consistency of breadcrumbs.
If using chicken breast, slice it into strips. Pound the chicken strips in between two pieces of parchment paper until they are more flat.
Whisk the eggs in a bowl. Pour flour into another bowl, and Veggie Crisps crumbs into another.
Add pepper and garlic powder to each side of the chicken strips. Lightly dust them in flower.
Next, dip the strips into the whisked eggs and drip them off very well. Coat the strips well in Veggie Crisps crumbs. Place strips on a parchment-lined baking sheet.
Bake the chicken for 15 minutes at 400 degrees.
Lower the oven to 350, then bake for about 20 minutes or until golden brown.
